9 Months of Plated Desserts... just a few


Chocolate mousse dome with a vanilla creme brûlée center. 

Hazelnut espresso trio- chocolate cheesecake, espresso chocolate mousse dome with a chocolate brûlée center, and a hazelnut crunch slice that is hazelnut daquoise with a milk chocolate mousse and crunchy puffed rice croquant. 

Peach Apricot Entremet- Oatmeal spice cake, apricot peach mousse, peach gelee, streusel


 Chocolate Trio- raspberry cream tart, chocolate mousse slice, chocolate mousse done


Summer Berry Duo- orange Jaconde with a blueberry compote and a blueberry mousse, and a white chocolate mousse dome with a strawberry creme brûlée and blackberry gelee center with an almond daquoise base. Blackberry Coulis on the plate.

Mixed Berry Entremet 

Custom Trio- carrot cake slice, chocolate raspberry mousse dome, vanilla cheesecake
Duo of vanilla bean cheesecake, and a chocolate truffle slice

Dark chocolate raspberry mousse with a raspberry creme brûlée center
Caramel Napoleon

Individual Chocolate truffle cake
Strawberry shortcake slice

Mixed berry Entremet
Tropical slice- coconut daquoise, pineapple gelee, pineapple coconut mousse.

  1. That all looks so delicious! I think my favorites are the Summer Berry Duo and the Dark Chocoate raspberry Mousse! They are just too beautiful to eat. Now I am hungry!

  3. All of these are so beautiful. I'm an "at home" pastry cook. It's difficult to find recipes like these. I hope you don't mind if I work with the ingredients you have listed and produce something similar. They all look wonderful and I have the molds and many recipes just love your composition.
